Chill-edge-eee-ohlo! Italian for cherry, and boy is that an apt name! Cherries in abundance: fresh, juiced and cooked down for compote. Violets, lavender and a wild Mediterranean spice. Pleasantly stony as well to keep all that fruit in check! Named for the Keep at Beverston Castle.
