Domaine Tollot-Beaut Chorey-les-Beaune
Produced by one of Simon's favourite Burgundy producers, Domaine Tollot-Beaut. Back in 1921 the family became one of the first producers in Burgundy to bottle their own wines (until then, it was usual for the wine to be sold to negociants and merchants who would blend and bottle under their own labels).
This example, from Chorey-les-Beaune, is bright ruby red in colour. The nose is expressive, with aromas of red cherries, bramble fruit and floral notes. On the palate, it has a poised acidity with fine, velvety tannins. The use of oak in Tollot-Beaut wines is incredibly restrained - with fermentation taking place in steel, and then ageing in predominantly older oak for 16-18 months. Together with their relatively cool cellar, this approach allows for the fresh fruit to really shine.
