Caiaffa Nero di Troia

Another wonderful wine from organic winery, Caiaffa, in Puglia. Following a spontaneous fermentation, using indiginous yeasts, a relatively short maceration is utilised (approx two weeks) to extract lovely red and dark fruit flavour notes without becoming as big and heavy as Puglian wines can. Four months in older oak helps to soften the wine, adding a hint fo vanilla and savoury, leather spice. Beautiful wine.
