Mixed fermentation Saison aged in wine barrels for at least 3 months Each release of this beer is a blend of barrels from each previous batch each fermented using our constantly evolving house culture, similar to a Sherry Solera system. Blending the beer adds complexity and depth over time. The humble, delicate, floral Saison we put into barrel, through the blending process, becomes a nuanced, multi-level beer, adding levels of green apples and ripe pear, honeyed sweet apricots, hints of white pepper spice and sourdough tartness that finishes with a fresh earthiness and pencil shaving bitterness, that is so much more than the sum of its parts. Perfect to drink fresh or for you to hold on to and allow to age and develop further in bottle.
